Guilt Free Eggnog

Thanksgiving is over. Donzo. Finished. Fade to black.

Now we can finally concentrate on Christmas! I love this time of year and all the goodies and goodwill it brings with it. One of my favorite Christmas treats has to be Eggnog. Fortunately, there’s also a lot of vegan Eggnog alternatives. One thing I don’t like about this drink is the high sugar and fat content.

A half cup of dairy-based eggnog averages at 180 calories. So I only get half a cup?! My favorite soy-based eggnog is a tad better at 80 calories for half a cup. OK, so I can have a full cup?

So, quite by accident I created a raw vegan Eggnog smoothie. You can enjoy a giant glass of it without all the guilt.

Ingredients:

2 1/2 – 3 cups frozen bananas

1/2 medium sized apple

2 dates

1 -1 1/2 tsp cinnamon

3/4 – 1 cup unsweetened almond milk

Water (added for preferred consistency)

Directions:

First, soak your dates in a cup of warm water for at least 10 minutes. I do this to ensure my blender can do its job. Then add everything to your blender. If you don’t have a fancy high-powered blender I suggest chopping your ingredients very small before blending. While blending, slowly add water a little at a time until you get the consistency you like. I prefer chunky, but you may want more of an Eggnog drink. This averages to about 65 calories a cup. And if you do Weight Watchers I hear fruit is free points. So there you go.

That’s it! Now enjoy your holiday treat!

Catarina is a big fan of my creation!
