Easy eating

A few weeks ago Harbor Greens was having a sale on cherries so being the fruit loving nut that I am, I high tailed to the University Place location to scoop some up. It was also very hot that week, so I decided to make the greatest thing ever: Cherry ice cream.

This is one of the easiest things you will ever make.

Ingredients:

  • Frozen bananas
  • Frozen cherries

Directions:

Blend bananas and cherries in a food processor or high speed blender. After it has created a creamy consistency you can either eat as is or put in the freezer for an hour before eating.

Done.

This batch is right out of the food processor. Has a “soft serve” consistency to it.

Notes:

Your bananas should be ripe. I’m talking banana bread bananas. Like fruit flies have taken over the kitchen ripe. Peel the bananas and break up before sealing in a Ziploc bag or Tupperware. I typically use an extra-large banana for every 2 cups of cherries. That alone adds up to somewhere between 275-300 calories. Plus you get all the health benefits of eating bananas (potassium, fiber, protein) and cherries (iron, vitamin A & C and more fiber).

The great thing about this ice cream is it’s fat free! So eat up.

You could totally eat this for breakfast.
